I’m gonna make this short and sweet today. Actually I’m just going to get to the point. Those things pictured above, those maple chocolate chip toffee bites? They have come and gone twice in our house already. Can you say addict? Yes, that’s us. And my family. I got them hooked! Maple chocolate chip toffee bites. No baking required. You guessed it, this are my healthy bites flavor of the month for September. It’s kinda similar to the salted caramel bites, but also very different. Haha, if that make sense?
But I have a small confession. I planned this recipe months ago and I was holding out on you. You see, I made the Paleo Maple toffee it at the beginning of the month just so that I could make these toffee bites later. I know, I’m sneaky. But hear me out.
For one, I really want to make homemade toffee; toffee that was easy to make, and like I said, Paleo friendly. And two, I had this major craving my BEST EVER maple chocolate chip cookies. My dilemma? Trying to save some extra Maple toffee so I could actually make these maple chocolate chip toffee bites later.
Anyway, I ended up with just a cup left of maple toffee. Just enough for making maple chocolate chip toffee bites.
Although I really wish I had made more to begin with. Yes, first world problems, the struggle is real .
This is why am posting a healthy bites recipe at the end of the month. Hey better late than never right? But I don’t think you’ll mind, because I’m really giving you another reason to make that maple toffee.
Have I said the word toffee and maple enough yet? BEST THINGS EVER!
Killing two birds with one stone here. You can make these maple chocolate chip toffee bites, or if you’re like me, you can make a big batch of the toffee, share some with your family, then keep the rest for these bites. Or just keep it all for you.
Yes, I did try to make these bites Paleo friendly with the Paleo maple toffee. But if you’re in a time crunch, you can certainly buy your own toffee bits at the store, and throw it into these bites. Sorry, those are not paleo. That’s okay, we will then label these maple chocolate chip toffee bites Paleo-ish with a “hint” of white sugar, and a “touch” of some ingredients the caveman really didn’t eat. But shhh…. we won’t tell them. Sound good?
Speaking of good… here’s the maple chocolate chip toffee bites recipe.


No Bake Maple Chocolate Chip Toffee Bites {Paleo Friendly}
Ingredients
- 1 cup (or 4 pieces) paleo toffee - cut or chopped into bits or english toffee bits in baking section (not paleo)
- 1 cup coconut flour (sifted) or other gluten free flour of choice.
- 1 cup almond flour/meal
- 1/3 cup chocolate chips (we use dark chocolate or enjoy life vegan chocolate)
- 1/2 cup chunky almond butter
- 1/4 to 1/3 c maple syrup depending on the flour you.
- 1 tsp vanilla
- coconut sugar, cinnamon, or pumpkin spice to roll in after freezing (optional)
Directions
- Chop up your toffee and transfer into a mixing bowl.
- Add your almond meal, coconut flour, and chocolate chips. Mix well.
- Next add in your nut butter. Stir ingredients all together.
- Add in your maple syrup a little at time. Just in case you need more or less depending on the flour/toffee you use.
- Add vanilla then mix again well with hands.
- Roll into 1-1.5 inch balls and place on cookie tray or plastic ware with parchment paper underneath.
- Let them freeze for 20-30 minutes then transfer into a Ziplock bag.
- Once frozen, dust with cinnamon, coconut sugar, or pumpkin spice.
- keep in fridge or freezer for up to 6 weeks.
Recipe Notes
Feel free to use other toffee or caramel bits if you don't want to use the homemade paleo.
If making vegan, sub the toffee for peanut butter chips or other vegan friendly candy of choice.

Nutrition per bite and using coconut flour
Now here’s my suggestion on how to use these bites. Remember those whiskey cake bites I made last winter? Yes Boozy balls. Well these bites have similar purpose! Cake texture and perfect for sharing during the holidays! They are great gluten free treats for parties or for people that might have food allergies. But still easy and tasty.
Remember, we aim to please for those who have food allergies or sensitivity . Ahem, like a lot of us. *raises my hand.*
I’m going to make messages in the recipe box for those who are vegan or sensitive to dairy.
Oh, I forgot, I was supposed to make this short and sweet. Yes, weekend things must go on and so much life. So maple chocolate chip chocolate bites. Not a lot of ingredients, Paleo friendly. And ready in 15 minutes or less. DO IT!
