But in all seriousness, something happened to me a few weeks ago that kinda put a damper in my breakfast and all things baking mood. And I needed something to fix that. So what happened? Well, um, I was told to avoid eggs for a few weeks until we figure out if I really have serious allergy versus a sensitivity. Tears… real tears here.

I was told this after we (my holistic nutritionist and I) did some blood work and other food allergy testing. Yes, I am a nutritionist with a nutritionist (everyone needs one). And yes, this egg loving girl was sad! But also, it made me realize how much we rely on eggs to bake and how much we really do eat eggs! I think they are wonderful and healthy but I also know that many others have a hard time digesting them and/or are vegan. It can be common to develop a food sensitivity when your immunity or gut health is poorly functioning. The body kinda backfires. When that happens, even something healthy can make you feel crappy, you know? So it’s better to get back off sensitive foods until you’re all healthy!

That being said, I’ve been on a quest to make more gluten free and vegan friendly recipes. Hence these vegan chocolate peanut butter dough balls. You cool with that?

One other thing you might need to know. I  hid some veggies in them too. Because vegetables are magical and we always need to sneak more! Oh, and guess what? I shared these chocolate peanut butter dough balls with all my non gluten free and non vegan friends, family, and co-workers! NO ONE knew they were … SUPER DUPER HEALTHY and vegan!

That, my friends, made up for my eggless baking sorrows.

So today I’m going to walk you through the steps on how to make Gluten Free Vegan Chocolate Peanut Butter Dough Balls (with hidden veggies). These are so easy. And total lifesavers when it comes to vegan/gluten free/dairy free and kid friendly desserts. I mean breakfast. I mean BOTH!

You ready?

All you need is some dark chocolate or vegan chocolate chips, coconut oil, vanilla extract, cocoa powder, non dairy milk, chia seed, peanut flour, gluten free oatmeal, coconut sugar or agave nectar, and a sweet potato. Got that?

Okay, first peel your sweet potato and then baking it in oven or in microwave. Then make sure you have your oats all ground up. Just grind them in a blender real quick so you make oat flour or meal like batter.

Then you make your chia egg (1 tbsp chia soaked in 3 tbsp water). Then you mix it all together, roll into balls, and bake. Once that’s done. This is what they look like before the coating.

You can have option of making a dark chocolate magic shell coating! Which literally takes 3 steps and 10 minutes.

Here. let me explain more. And trust me when I say it’s way EASIER than it looks.

Vegan Chocolate Peanut Butter Dough Balls (Gluten Free)

Ingredients

  • 1 medium sweet potato (peeled and cooked)
  • 1 cup gluten free oats (ground)
  • 1/4 cup coconut oil
  • 1/3 cup peanut flour (Better Body Foods)
  • 1 tbsp cocoa powder
  • 1 tbsp chia plus 3 tbsp water (soaked)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/3 cup coconut sugar or brown sugar
  • 1/4 cup non dairy milk of choice
  • 1/4 tsp salt

  • Dark Chocolate Magic Shell Coating
  • 4 oz dark chocolate or vegan chocolate chips
  • 1 oz coconut oil (liquid)
  • 1/2 tsp vanilla

Instructions

  1. Preheat oven to 350F. Line a baking tray with parchment paper and set aside.
  2. Peel your sweet potato and bake it or microwave it until it's thoroughly cooked. Mash it all up and Set aside.
  3. Next grind up you oats until they are more like a flour or meal texture. Pour into a large bowl.
  4. Then make your chia egg. Combine 1 tbsp chia with 3 tbsp water. let it sit for 20 minutes or more until a gel is formed.
  5. COmbine everything but your chia egg into a large bowl or blender. Mix it up really well until a thick cookie dough like batter is formed. Add in your chia egg and mix again.
  6. Roll batter into balls and place on baking sheet with parchment paper. Balls should be about the size of golf balls. I pressed them down gently so they had a flat bottom.
  7. Bake for 18-20 minute. REmove and let cool.

  8. FOR THE DARK CHOCOLATE MAGIC SHELL COATING
  9. Gently place a stainless steel or pyrex bowl on top of a boiling pot. Place chocolate in bowl and let the chocolate melt on a low boil. (you can use a double boiler as well)
  10. Once it starts melting, add in your coconut oil and vanilla extract.
  11. Continue on medium heat and stir until melted.
  12. Remove from heat and let it cool for 5 minutes.
  13. Dip your bites or balls into chocolate. Or drizzle chocolate on top.Place dough balls in freezer for 30 minutes. Sprinkle with extra peanut flour once done.
  14. I had extra chocolate left over. (see notes on how to store it)

Notes

Don't have a stove? You can make the magic shell in the microwave. No problem. Just keep reheating it 1 minute at a time until melted.

Want to make more magic shell and keep it for later? EASY --> You can store chocolate in glass jar in fridge until you want to use again. Just simply reheat.

You don’t have to use the chocolate magic shell coating, but I think the peanut butter dough balls are AMAZING with it. Plus it’s fun to make and drizzle on top of oatmeal, bread, ice cream, whatever!
